YOu can uninstall AR5 & Acrobat5, then reinstall Acrobat5, then install AR6. You should also be able to reinstall Acrobat5 after installing AR6. Either way, you'll have to reboot between uninstall and reinstall.

You will have to find the CD or other media that your PDFWriter came on. It often was packaged with products that included PhotoDeluxe. Then install PDFWriter from that CD. PDFWriter is not part of the AR5 product that is a free download and should not have uninstalled. However, you will still have to find the installation CD that had PDFWriter and simply reinstall it.
