Title: Pork Chops with Spicy Peanut Sauce

Yield: 4 Servings
1/3 c Milk
1/3 c Coconut
1/4 c Creamy peanut butter
1/4 c Chicken broth
2 tb Diced green chilie peppers
1 tb Diced pimento
1 tb Light soy sauce
2 Cloves garlic; minced
1 ts Sugar
1/2 ts Ground ginger
1/2 ts Ground coriander
4 Boneless pork loin chops;
.. 3/4" thick
Salt & pepper to taste
1 tb Oil
Scallions; optional
Scald milk. Remove from heat and stir in coconut;
let stand 10 mintues. Strain, discarding coconut.
Stir in peanut butter, broth, peppers, pimento,
soy sauce, garlic, sugar, ginger and coriander.
Cook over medium heat until smooth and thickened.
Sprinkle chops with salt & pepper. Fry in hot oil
10 to 12 minutes or until slightly pink in center,
turning once. Serve with sauce. Top with
scallions, if desired.
Suitable to feed the mass in any mosque.
